Meal 75 was spinach, onion & mushroom omelettes with buttery yeast rolls. Our family sells fresh vegetables, fruit & baked goods at our local farmer's market and sometimes we get to bring home some left-overs. It was left-over spinach & onions that filled these wonderful omelettes. We also sprinkled them while warm with a little fresh parmesan.
